- 2 Eggplants
- 1 Onion
- 3 Garlic Cloves

- 1 tsp of Paprika
- 1 tsp of Salt
- 1/2 tsp of Black Pepper
- 2 cups of Water

Method
Step 1: Preparing the Eggplant
Peel the eggplants and cut them into small cubes. Sprinkle salt over the eggplant cubes and let them sit for 10 minutes. Rinse the eggplants with water and dry them with paper towels.Step 2: Preparing the Rice
Wash the rice and soak it in water for 10 minutes. Drain the water and set the rice aside.Step 3: Preparing the Vegetables
