Ingredients

  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1 cup of chopped tomatoes
  • 3 cups of chicken broth
  • 1/4 cup of vegetable oil

Method

  1. Wash the rice in a large bowl of cold water and set aside.
  2. Heat the vegetable oil in a large pot over medium heat.

  4. Add the chopped bell peppers, thyme, curry powder, paprika, and salt to the pot and cook for 5-7 minutes or until the vegetables are tender.

  7. Add the chicken broth to the pot and stir to combine.

  10. Fluff the rice with a fork and serve hot.

Notes

Jamaican Jollof Rice can be served with chicken or beef stew or fried plantains. For a vegetarian option, omit the chicken broth and use vegetable broth instead.
