For the meat marinade:- 1 lb boneless meat (chicken, lamb or beef)
- 1 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon garam masala powder
- 1 teaspoon salt
- 2 cups basmati rice
- 4 cups water
- 2 bay leaves
- 3 green cardamom pods
- 3 cloves
- 1 cinnamon stick
- 1 teaspoon salt
- 1/4 cup vegetable oil
- 2 tablespoons ghee
- 1 large onion, finely sliced
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 2 green chilies, slit lengthwise
- 1/4 cup mint leaves, chopped
- 1/4 cup cilantro, chopped
- 1 tablespoon garam masala powder

Method
- Wash the basmati rice and soak for 30 minutes.
- In a bowl, mix the meat with all the marinade ingredients and set aside for 30 minutes.
- Heat oil and ghee in a large pan on medium heat. Add sliced onions and fry until golden brown. Remove half of the onions and set aside.
- Add ginger-garlic paste, cumin seeds, and green chilies to the remaining onions in the pan and cook for 2 minutes.
- Add marinated meat to the pan and cook for 10-15 minutes or until the meat is cooked through.
- Add chopped mint leaves, cilantro, and garam masala powder to the pan and mix well.
- In a large pot, bring 4 cups of water to a boil. Add bay leaves, green cardamom pods, cloves, cinnamon stick, and salt to the water.
- Drain the soaked basmati rice and add it to the pot of boiling water. Cook for 5 minutes or until the rice is 70% cooked.
- Drain the rice and add it to the pan with the meat mixture. Mix well.
- Sprinkle the reserved fried onions over the top of the rice.
- Cover the pan with a tight-fitting lid and cook on low heat for 10-15 minutes or until the rice is fully cooked.
- Gently fluff the rice with a fork and serve hot.
