- 2 cups of brown rice
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves of garlic, minced
- 1 tablespoon of tomato paste
- 1 tablespoon of paprika
- 1 teaspoon of cumin
- 1/4 teaspoon of cayenne pepper
- 4 cups of low-sodium vegetable broth
- Salt and pepper, to taste
Equipment
- A large pot with a lid
- A sharp knife
- A cutting board
- A wooden spoon
Method
- Begin by heating up the large pot over medium heat.
- Add diced onion, red bell pepper, and green bell pepper to the pot and sauté for about 5 minutes until they begin to soften.
- Add minced garlic to the pot and stir for about a minute until fragrant.
- Add tomato paste, paprika, cumin, and cayenne pepper to the pot and stir to combine with the vegetables.
- Add the brown rice to the pot and stir to coat it with the vegetable mixture.
- Add low-sodium vegetable broth to the pot and stir to combine everything together.
- Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer for about 25 minutes or until the rice is tender and the liquid has been absorbed.
- Remove from heat and let the rice sit for about 5 minutes before fluffing with a fork and serving.
Notes
