- 2 cups Basmati rice
- 1 cup of frozen peas and carrots
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tablespoons of oil
- 2 boneless chicken breasts, cut into small pieces
- 1 tablespoon of soy sauce
- 1 tablespoon of vinegar
- 1 tablespoon of chili sauce
- 1 tablespoon of ketchup
- 1 tablespoon of tomato paste
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 teaspoon of garam masala
- 1 teaspoon of red chili powder
- 2 bay leaves
- 4 cups of water
- Fried onions, for garnishing
Equipment
- A large saucepan with a lid
- A frying pan
- A wooden spoon
- A strainer
Method
- Wash the rice thoroughly and soak it in water for 15-20 minutes. Drain the water and keep it aside.
- Heat the oil in a saucepan over medium heat. Add the chopped onions and garlic and sauté for 2-3 minutes until they turn golden brown.
- Add the chicken pieces, soy sauce, vinegar, chili sauce, ketchup, tomato paste, salt, black pepper, cumin powder, coriander powder, garam masala, red chili powder, and bay leaves. Fry for 5-7 minutes until the chicken is cooked and tender.
- Add the frozen peas and carrots and fry for another 2-3 minutes.
- Add the soaked rice and fry for 2-3 minutes until it turns slightly golden.
- Add 4 cups of water and bring it to a boil.
- Reduce the heat to low and cover the saucepan with a lid. Cook for 15-20 minutes until the rice is cooked and fluffy.
- Once the rice is cooked, turn off the heat and let it sit for 5-10 minutes.
- Fluff up the rice and transfer it to a serving dish. Garnish with fried onions.
- Serve hot with raita or salad.
Notes
- You can add more or less spices according to your taste.
- You can use fresh or frozen vegetables.
- You can also add shrimp or beef instead of chicken.
