Ingredients

  • 2 cups Basmati rice
  • 1 cup of frozen peas and carrots
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons of oil
  • 2 boneless chicken breasts, cut into small pieces
  • 1 tablespoon of soy sauce
  • 1 tablespoon of vinegar
  • 1 tablespoon of chili sauce
  • 1 tablespoon of ketchup
  • 1 tablespoon of tomato paste
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of garam masala
  • 1 teaspoon of red chili powder
  • 2 bay leaves
  • 4 cups of water
  • Fried onions, for garnishing

Equipment

  • A large saucepan with a lid
  • A frying pan
  • A wooden spoon
  • A strainer

Method

  1. Wash the rice thoroughly and soak it in water for 15-20 minutes. Drain the water and keep it aside.
  2. Heat the oil in a saucepan over medium heat. Add the chopped onions and garlic and sauté for 2-3 minutes until they turn golden brown.
  3. Add the chicken pieces, soy sauce, vinegar, chili sauce, ketchup, tomato paste, salt, black pepper, cumin powder, coriander powder, garam masala, red chili powder, and bay leaves. Fry for 5-7 minutes until the chicken is cooked and tender.
  4. Add the frozen peas and carrots and fry for another 2-3 minutes.
  5. Add the soaked rice and fry for 2-3 minutes until it turns slightly golden.
  6. Add 4 cups of water and bring it to a boil.
  7. Reduce the heat to low and cover the saucepan with a lid. Cook for 15-20 minutes until the rice is cooked and fluffy.
  8. Once the rice is cooked, turn off the heat and let it sit for 5-10 minutes.
  9. Fluff up the rice and transfer it to a serving dish. Garnish with fried onions.
  10. Serve hot with raita or salad.

Notes

  • You can add more or less spices according to your taste.
  • You can use fresh or frozen vegetables.
  • You can also add shrimp or beef instead of chicken.
