Jollof rice is a popular dish in West Africa, especially in Nigeria, Ghana, and Senegal. Ingredients

  • 2 cups of long-grain rice
  • 3-4 large ripe tomatoes, blended

  • 2 scotch bonnet peppers, blended
  • 1 tablespoon of tomato paste
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of salt
  • 2 teaspoons of curry powder
  • 1 teaspoon of thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of ground ginger
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 cup of vegetable oil
  • 3 cups of water or chicken stock

Equipment

  • Large pot or Dutch oven
  • Blender or food processor
  • Cutting board and knife
  • Measuring cups and spoons

Method

  1. Rinse the rice in cold water and set aside.
  2. Blend the tomatoes, red bell peppers, and scotch bonnet peppers in a blender or food processor until smooth.
  3. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  4. Add the chopped onions and fry for 2-3 minutes or until softened.
  5. Add the tomato paste and continue frying for another 2-3 minutes.
  6. Add the blended tomato and pepper mixture, smoked paprika, salt, curry powder, thyme, dried rosemary, ground ginger, garlic powder, and onion powder to the pot. Stir and let it cook for 10-15 minutes or until the sauce thickens.
  7. Add the rice to the pot and stir to coat it with the sauce. Add 3 cups of water or chicken stock and stir again.
  8. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  9. Cook for 25-30 minutes or until the rice is cooked and the liquid has been absorbed.
  10. Fluff the Jollof Rice with a fork and serve hot with your favorite protein, vegetables or salad.

Notes

Some Jollof rice recipes call for the use of bay leaves or stock cubes, but these ingredients are optional. You can also add vegetables like peas, carrots or green beans to the rice for extra flavor and nutrition.
