Malacca chicken rice ball is a famous dish from the city of Malacca in Malaysia. It is a complete meal consisting of rice balls, succulent chicken, and a flavorful sauce. - 1 whole chicken, about 1.5 kg
- 2 cups of rice
- 2 cups of chicken broth
- 5 cloves of garlic, minced
- 1-inch ginger, grated
- 2 pandan leaves, knotted
- 2 star anise
- 2 cinnamon sticks
- 2 cloves
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 1 tbsp cornstarch
- 1 cup of water

Method
- Start by cooking the rice. Rinse the rice and add it to a pot with the chicken broth, pandan leaves, and a pinch of salt. Cook the rice for about 20 minutes or until fully cooked. Once done, remove from heat and let it cool.
- While the rice is cooking, prepare the chicken. Clean and rinse the chicken and remove any excess fat. Add the chicken to a steamer and steam for about an hour or until fully cooked.
- Once the chicken is cooked, remove it from the steamer and let it cool. Once cooled, shred the chicken into small pieces.
- In a small bowl, mix together the soy sauce, sesame oil, oyster sauce, sugar, and cornstarch. Set aside.
- Heat a pot with oil and sauté the garlic and ginger until fragrant. Add in the star anise, cinnamon sticks, and cloves and stir fry for a few seconds.
- Add in the shredded chicken and stir fry for a few minutes until the chicken is coated with the spices.
- Pour in a cup of water and let it simmer for about 10 minutes.
- Pour the sauce mixture into the pot and stir well. Let it simmer for another 5 minutes until the sauce has thickened.
- Shape the cooled rice into small balls using your hands.
- Serve the rice balls with the chicken and sauce on top.
