Ingredients

Method

1. In a mixing bowl, combine all the ingredients for the chicken marinade. Mix well and let it marinate for at least 30 minutes. 2. Rinse the basmati rice under running water until the water runs clear. Soak the rice in cold water for 15-20 minutes. 3. In a large pot, heat some oil and add the sliced onions, garlic, cinnamon stick, cardamom pods, cloves, and bay leaf. Fry until the onions are golden brown. 4. Drain the rice and add it to the pot. Fry for a few minutes until the rice is coated with the spices. 5. Add the chicken broth and salt to taste. Bring to a boil and then reduce the heat to low. Cover the pot and let the rice cook for around 10-15 minutes or until the water has been absorbed and the rice is tender. 6. In another pan, heat some oil and add the marinated chicken. Fry until the chicken is cooked through and golden brown. 7. Once the rice and chicken are cooked, combine them together in a serving dish. Garnish with fried onions, chopped parsley, and toasted almonds.

Notes

This dish can be served with a side of salad or some yogurt dip. You can also add some raisins or dried apricots to the rice for some added sweetness.
