The ingredients you will need to make this recipe are as follows:- 4 boneless chicken thighs, cut into small pieces
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 tablespoon of curry powder
- 1 tablespoon of ground cumin
- 1 tablespoon of ground coriander
- 1 teaspoon of turmeric
- 1 can of coconut milk
- 300g of basmati rice
- 450ml of water
- Salt and pepper to taste
- 2 tablespoons of vegetable oil

Method
1. In a large frying pan, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove from the pan and set aside. 2. In the same pan, add the chopped onion, crushed garlic, sliced red and green peppers, and cook for 5 minutes until softened. 3. Add the curry powder, ground cumin, ground coriander, and turmeric to the pan and stir well to combine. 4. Add the coconut milk and stir well to combine. Bring to a boil and then reduce the heat to low. 5. In a large saucepan, add the basmati rice, water, and a pinch of salt. Bring to a boil and then reduce the heat to low. Cover with a lid and simmer for 10-15 minutes, or until the rice is cooked and the water has been absorbed. 6. Once the rice is cooked, fluff it up with a fork and add it to the pan with the chicken and vegetables. Stir well to combine and season with salt and pepper to taste. 7. Serve hot and enjoy!Notes
