- 2 cups Jeerakasala rice

Method
- Soak the Jeerakasala rice in water for 30 minutes.
- Heat oil or ghee in a pressure cooker or a heavy-bottomed pan.
- Add the whole spices (cinnamon, cloves, cardamoms, cumin, and fennel seeds) and sauté for a minute until fragrant.
- Add the sliced onions and green chilies and sauté until the onions turn translucent.
- Add the ginger-garlic paste and sauté for a minute.
- Add the chopped vegetables and sauté for 2-3 minutes.
- Add the chicken or mutton pieces and sauté until they turn brown.
- Add the turmeric powder, red chili powder, coriander powder, and garam masala powder and mix well.
- Add the soaked rice and mix well.
- Add water, yogurt, mint leaves, coriander leaves, and salt to taste and mix well.
- Cover the pressure cooker with a lid and cook for 2 whistles or cook in a heavy-bottomed pan with the lid closed for 20-25 minutes on low flame until the rice is cooked and the water is absorbed.
- Switch off the flame and let the pressure release naturally.
- Open the lid and fluff the rice with a fork.
- Your Jeerakasala Rice Biryani is ready to serve.
