Ingredients:

For the chicken:
  • 4 boneless chicken breasts

For the gravy:

Method:

1. Rinse the rice and add it to a pot with 2 cups of water, butter, and salt. Bring it to a boil, then lower the heat and let it simmer for 18-20 minutes. In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. 3. Heat oil in a large skillet over medium-high heat. Dip the chicken in the egg mixture, then coat it in the flour mixture. Place it in the skillet and fry until golden brown and cooked through (around 6-8 minutes per side). Remove chicken from skillet and place on a paper towel-lined plate to drain excess oil. 4. In a small saucepan, mix the chicken broth, flour, water, black pepper, and salt together. Cook over medium heat, whisking constantly until it thickens (around 3-4 minutes). 5. Place rice in a bowl and top it with the fried chicken. Pour gravy over the chicken and serve hot.

Notes:

To make the dish spicier, add more cayenne pepper to the flour mixture. You can also add some chopped green onions or jalapeƱos on top of the rice for added flavor.
