- 1/2 cup pistachios, shelled and sliced

Method
Follow the below steps to prepare Kabuli Pulao:- Wash the rice in cold water until the water runs clear, then soak the rice in cold water for 30 minutes.
- Heat the oil in a large pot over medium heat, then add the sliced onions and fry until golden brown.
- Add the meat to the pot and fry until browned on all sides.
- Add the grated carrots, raisins, and spices to the pot and fry for 5 minutes.
- Add 6 cups of water to the pot and bring it to a boil.
- Drain the rice and add it to the pot, then stir well.
- Reduce the heat to low, cover the pot with a lid, and simmer for 20 minutes.
- After 20 minutes, stir the rice gently, then sprinkle the sliced almonds and pistachios over the top of the rice.
- Cover the pot again and simmer for another 20 minutes.
- After 20 minutes, turn off the heat and let the rice rest for 10 minutes.
- Fluff the rice with a fork, then serve hot.

- You can use chicken instead of lamb or beef if you prefer.
- You can use a mixture of nuts of your choice instead of almonds and pistachios.
