Ingredients

  • 1 cup Basmati rice
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups chicken broth
  • 1/4 cup tomato sauce
  • 1/4 cup frozen peas

Equipment

  • Measuring cups and spoons
  • Cutting board and knife
  • Wooden spoon

Method

  1. Rinse the rice in cold water until the water runs clear. Drain and set aside.
  2. In a large saucepan, heat the oil and butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the paprika, cayenne pepper, cumin, thyme, salt, and black pepper. Cook for 1 minute.
  4. Add the rice and stir to coat with the spice mixture.
  5. Add the chicken broth and tomato sauce to the pan and stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pan. Cook for 15 minutes.
  7. Add the frozen peas to the pan and stir to combine. Cover the pan and continue cooking for another 10 minutes, or until the rice is tender and the liquid has been absorbed.
  8. Remove the pan from the heat and let it sit for 5 minutes before fluffing the rice with a fork.
  9. Serve the spicy rice hot with your favorite KFC fried chicken or any other meal.

Notes

  • If you don't have Basmati rice, you can use any other long-grain rice.
  • You can adjust the spiciness of the dish by adding more or less cayenne pepper.
  • If you prefer a milder flavor, you can omit the cayenne pepper altogether.
