Ingredients

For the shrimp:
  • 1 lb. shrimp, peeled and deveined
  • 2 tbsp. olive oil

  • 1/4 tsp. red pepper flakes
  • Salt and black pepper, to taste
For the cauliflower rice:
  • 1 head cauliflower, riced
  • 2 tbsp. olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp. cumin
  • 1/2 tsp. paprika
  • Salt and black pepper, to taste

Equipment

  • Large skillet or wok
  • Food processor or grater for cauliflower rice
  • Knife and cutting board
  • Bowls and utensils for mixing and serving

Method

1. Begin by preparing the cauliflower rice. Cut the cauliflower into small pieces and pulse in a food processor until it reaches a rice-like consistency. Alternatively, you can grate the cauliflower using a cheese grater.
2. Heat a large skillet or wok over medium-high heat. Add 2 tbsp. of olive oil and the diced onion. Cook for 2-3 minutes until the onion is soft.
3. Add the minced garlic, cumin, and paprika to the skillet. Cook for another 1-2 minutes until fragrant.
4. Add the cauliflower rice to the skillet and stir to combine with the onion and spices. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly browned.
5. Remove the cauliflower rice from the skillet and set aside.
6. In the same skillet or wok, add another 2 tbsp. of olive oil and the peeled and deveined shrimp. Cook the shrimp for 3-4 minutes until pink and cooked through.
7. Add the minced garlic, paprika, oregano, red pepper flakes, salt, and black pepper to the skillet with the shrimp. Stir to combine and cook for another minute or so until the garlic is fragrant.
8. Serve the shrimp over the cauliflower rice and enjoy!

Notes

If you want to add some extra flavor and texture to this dish, you can top it off with some chopped cilantro, diced avocado, or a squeeze of lime juice. You can also adjust the spice level by adding more or less red pepper flakes.
