Ingredients

  • 2 cups Basmati rice
  • 1 kg beef, cut into small pieces
  • 2 large onions, chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons of ginger, minced
  • 1 tablespoon of cumin seeds
  • 1 tablespoon of coriander seeds
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 4 cloves
  • 2 bay leaves
  • 4 tablespoons of vegetable oil
  • 4 cups of water
  • Salt to taste

Equipment

  • A large pot with a lid
  • A sharp knife
  • A cutting board
  • A wooden spoon
  • A small frying pan

Method

  1. Wash the rice in cold water until the water runs clear. Drain and set aside.
  2. In a small frying pan, dry roast the cumin seeds, coriander seeds, cinnamon sticks, cardamom pods, and cloves until fragrant. Remove from heat and grind to a fine powder.
  3. In a large pot, heat the vegetable oil over medium heat. Add the onions and fry until translucent.
  4. Add the beef and fry until browned on all sides.
  5. Add the garlic, ginger, and ground spice mixture to the pot and stir well.
  6. Add the rice to the pot and stir well to coat with the spices.
  7. Add the water and salt to taste. Stir well.
  8. Add the bay leaves to the pot and bring to a boil.
  9. Reduce the heat to low and cover the pot with a lid. Cook for 20-25 minutes or until the rice is cooked and all the water has been absorbed.
  10. Remove the bay leaves and fluff the rice with a fork before serving.

Notes

  • You can add some chopped carrots and peas to the dish for some added nutrition and color.
  • If you like your pilau rice spicy, you can add some chopped chili peppers to the pot.
