Method

1. Rinse the rice in cold water and soak it for 30 minutes. 2. In a small bowl, soak the saffron strands in warm milk and set aside. 3. In a large pot, heat the ghee over medium-high heat. 4. Add the cumin seeds, cardamom pods, cinnamon stick, cloves, and bay leaf. Fry for 1-2 minutes, until the spices are fragrant. 5. Add the onions and fry until they are golden brown. 6. Drain the soaked rice and add it to the pot. Fry for 1-2 minutes, stirring constantly. 7. Add the water and salt to the pot and bring it to a boil. 8. Reduce the heat to low and cover the pot with a lid. Cook for 15-20 minutes, until the rice is cooked through and the water has been absorbed. 9. Once the rice is cooked, remove the pot from the heat and let it sit for 5 minutes. 10. Fluff the rice with a fork and add the saffron milk, almonds, and raisins. Mix well. 11. Serve hot and enjoy!
