  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Equipment

Method

  1. Preheat oven to 350°F.
  2. In a frying pan, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent.
  3. Add grated carrot and diced celery to the frying pan and cook for 5 minutes.
  4. In a large mixing bowl, combine cooked brown rice, cooked lentils, breadcrumbs, soy sauce, dried thyme, and dried rosemary.
  5. Add the cooked vegetables to the mixing bowl and mix all ingredients together.
  6. Season mixture with salt and pepper to taste.
  7. Grease a loaf pan with olive oil.
  8. Transfer mixture to the loaf pan and press down to make sure it is tightly packed.
  9. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown.
  10. Remove from the oven and let cool for 10 minutes before slicing.

Notes
