Ingredients

  • 3 cups cooked jasmine rice, cooled

  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tbsp. vegetable oil
  • 3 tbsp. soy sauce
  • 1 tbsp. oyster sauce
  • 1 tbsp. fish sauce
  • 1 tsp. sugar
  • Salt and pepper to taste
  • Cilantro for garnish (optional)

Equipment

  • Cooking spoon or spatula

Method

  1. Heat the wok or skillet over medium-high heat and add 2 tbsp. of oil.
  2. Add the minced garlic and stir-fry for a few seconds until fragrant.
  3. Add the chicken and shrimp and stir-fry for 2-3 minutes until cooked through. Remove from the wok and set aside.
  4. Add the remaining 1 tbsp. of oil to the wok and add the beaten eggs. Scramble the eggs until they are cooked and set aside with the chicken and shrimp.
  5. Add the chopped onions and red bell pepper to the wok and stir-fry for 2-3 minutes until softened.
  6. Add the frozen peas and stir-fry for another minute.
  7. Add the cooked rice and stir-fry for 2-3 minutes until heated through and slightly crispy.
  8. Add the chicken, shrimp, and eggs back into the wok and stir-fry for another minute to combine.
  9. Add the soy sauce, oyster sauce, fish sauce, and sugar to the wok and stir-fry for another minute to combine.
  10. Season with salt and pepper to taste and garnish with cilantro (optional).

Notes

  • You can use any kind of protein or vegetables you like in this recipe. Some popular options are beef, pork, tofu, broccoli, carrots, and corn.
  • Make sure to use cold, cooked rice for this recipe. Using freshly cooked rice will result in a mushy fried rice.
