- 1 cup Basmati rice
- 2 cups water
- 3-4 tablespoons ghee

- 1/4 teaspoon salt

Method
- Wash the rice thoroughly and soak it in water for 20-30 minutes.
- While the rice is soaking, heat 2 tablespoons of ghee in a frying pan over medium heat.
- Add the cashews and raisins and fry for 2-3 minutes until golden brown. Remove from heat and set aside.
- In a small bowl, soak the saffron threads in 1 tablespoon of warm water for 5-10 minutes.
- Heat the remaining ghee in a large pot over medium heat.
- Add the cardamom powder and stir for 30 seconds.
- Add the rice and stir for 2-3 minutes until the rice is lightly toasted.
- Add 2 cups of water, the saffron mixture, sugar, and salt to the pot and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Cook the rice for 15-20 minutes or until all the water is absorbed and the rice is cooked.
- Remove the pot from heat and let it sit for 5-10 minutes.
- Fluff the rice with a fork and add the fried cashews and raisins.
- Stir well and serve hot.
Notes
Kesari Rice can be made with other types of rice, but Basmati rice is the best choice because of its long grain and fragrant aroma. If you don't have saffron, you can use food coloring to get the same golden color. However, the flavor will not be the same.
