Ingredients

  • 2 cups of Basmati rice
  • 1 lb of lamb or chicken meat

  • 4 cups of water
  • 1/2 cup of vegetable oil
  • Salt to taste

Method

1. Wash the Basmati rice and soak it in water for 30 minutes. 2. In a large pot, heat the vegetable oil and add the chopped onions. Saute the onions until they are translucent. 3. Add the minced garlic and tomato paste. Saute for another 2-3 minutes. 4. Add the meat to the pot and saute until it is browned on all sides. 5. Add the kabsa spice mix and salt to taste. Mix well. 6. Add 4 cups of water to the pot and bring it to a boil. 7. Reduce the heat to low and cover the pot with a lid. Let it simmer for 10-15 minutes. 8. Drain the soaked rice and add it to the pot. Mix well. 9. Cover the pot with a lid and let it simmer for 20-25 minutes or until the rice is cooked. 10. Once the rice is cooked, turn off the heat and let it sit for 5-10 minutes before serving.

Notes

Kabsa rice can be served with a side of salad or yogurt. Some people like to add raisins, almonds or cashews to the dish for added flavor and texture.
