1. Begin by peeling the plantains and slicing them lengthwise into thin strips. 2. Heat the oil in a large skillet over medium-high heat. 3. Remove the plantains from the skillet and place them on a paper towel-lined plate to drain excess oil. 5. Using a meat tenderizer, pound the skirt steak until it's about 1/4 inch thick. 6. Season the steak with salt, pepper, cumin, garlic powder, and onion powder. 7. Heat the vegetable oil in the same skillet over medium-high heat. 8. Add the seasoned steak and cook until browned and cooked through, about 5-7 minutes per side. 9. Remove the steak from the skillet and let it rest for a few minutes before slicing it into thin strips. 10. In the same skillet, add the sliced onions and green peppers and cook until softened, about 5 minutes. 11. To assemble the jibaritos, place a layer of the fried plantains on a plate. 12. Add a layer of sliced steak on top of the plantains, followed by a layer of cooked onions and peppers. 13. Place a slice of American cheese on top of the onions and peppers. 14. Add another layer of fried plantains on top of the cheese to complete the sandwich. 15. Serve the jibaritos hot and enjoy!
