Ingredients

  • 2 cups cooked rice
  • 1 large ripe mango
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • 2-3 dry red chilies
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/4 cup grated coconut
  • 2 tablespoons chopped coriander leaves

Method

  1. Peel the mango and cut it into small pieces. Keep it aside.
  2. Heat oil in a pan and add mustard seeds.
  3. Once the mustard seeds start spluttering, add urad dal and chana dal. Fry until they turn golden brown.
  4. Add dry red chilies and fry for a few seconds.
  5. Add turmeric powder and mix well.
  6. Add the chopped mango, salt, and mix well. Cook for a minute or two until the mango is soft.
  7. Add the cooked rice and mix well. Cook for another 2-3 minutes.
  8. Add grated coconut and chopped coriander leaves. Mix well.
  9. Switch off the flame and serve hot.

  • Make sure the rice is cooked and cooled before adding it to the pan.
  • You can adjust the spice level according to your taste.
  • You can also add roasted peanuts or cashews to the dish for an extra crunch.
