Description
Karnataka Sambar is a traditional South Indian dish that is usually served with rice, idli, dosa, or vada. - 1 cup toor dal
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 carrot, chopped
- 1 drumstick, chopped
- 1 small eggplant, chopped
- 1/2 cup tamarind extract
- 2 tablespoons sambar powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon jaggery
- 2 tablespoons oil
- Salt to taste
- Water as required
- For Tempering:
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- 2-3 dried red chilies
- A pinch of asafetida
- A few curry leaves
Equipment
- Pressure cooker
- Heavy-bottomed pan
- Grinder or a blender
- Chopping board
- Knife
- Spatula
Method
- Wash and soak the toor dal in water for 30 minutes.
- Pressure cook the toor dal with 3 cups of water and turmeric powder for 3-4 whistles.
- Once the pressure is released, open the cooker, and mash the dal well.
- In a heavy-bottomed pan, heat oil, and add mustard seeds, cumin seeds, fenugreek seeds, dried red chilies, asafetida, and curry leaves.
- Once the mustard seeds start to splutter, add onions, and sauté until they turn translucent.
- Add tomatoes and sauté until they turn mushy.
- Add all the chopped vegetables, sambar powder, and salt. Mix well.
- Add tamarind extract, jaggery, and 2 cups of water, and mix well.
- Cover and cook until the vegetables are tender and cooked well.
- Add the mashed dal to the pan and mix well.
- Bring the sambar to a boil and simmer for 5-10 minutes.
- Adjust salt and spice levels as required.
- Garnish with coriander leaves and serve hot with steamed rice or any South Indian breakfast dish.
Notes
One can use any vegetables of their choice, like brinjal, pumpkin, okra, etc. Adjust the consistency of the sambar by adding more or less water, depending on your preference. One can add drumsticks for extra flavor.Nutrition Info
