  • 5-6 curry leaves
  • Salt to taste

Method

  1. Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, and chana dal. Fry them until they turn golden brown.
  2. Add asafoetida, turmeric powder, red chilli powder, and curry leaves. Fry them for a few seconds.
  3. Add the cooked rice and mix well. Add salt to taste and mix again.
  4. Add lemon juice and mix well. Turn off the heat.
  5. Cover the pan and let the rice sit for 5-10 minutes.
  6. After 10 minutes, remove the cover and fluff the rice with a fork.
  7. Your Jain Lemon Rice is ready to serve.

Notes

  • You can add roasted peanuts or cashews to the rice to give it some crunch.
