Method
- Wash the rice and soak it in water for 30 minutes.
- In a pressure cooker or Dutch oven, heat the vegetable oil and add the chopped onion.
- Saute the onion until it is translucent.
- Add the ginger and garlic paste and saute for another minute.
- Add the lamb pieces and saute until they are browned.
- Add the cumin, coriander, turmeric, cinnamon, and black pepper and saute for another minute.
- Add the chicken broth and salt to taste.
- Cover the pressure cooker or Dutch oven and cook on low heat for 1 hour.
- After 1 hour, drain the soaked rice and add it to the pot with the lamb.
- Add enough water to cover the rice by about 1 inch.
- Cover the pot and cook on low heat for another hour, or until the rice is cooked.
- Fluff the rice with a fork before serving.
Notes
- You can use lamb shoulder, leg, or neck for this recipe.
- If you don't have a pressure cooker or Dutch oven, you can cook the lamb and rice in separate pots and then combine them before serving.
