Method

  1. Wash the rice and soak it in water for 30 minutes.
  2. In a pressure cooker or Dutch oven, heat the vegetable oil and add the chopped onion.
  3. Saute the onion until it is translucent.
  4. Add the ginger and garlic paste and saute for another minute.
  5. Add the lamb pieces and saute until they are browned.
  6. Add the cumin, coriander, turmeric, cinnamon, and black pepper and saute for another minute.
  7. Add the chicken broth and salt to taste.
  8. Cover the pressure cooker or Dutch oven and cook on low heat for 1 hour.
  9. After 1 hour, drain the soaked rice and add it to the pot with the lamb.
  10. Add enough water to cover the rice by about 1 inch.
  11. Cover the pot and cook on low heat for another hour, or until the rice is cooked.
  12. Fluff the rice with a fork before serving.

  • You can use lamb shoulder, leg, or neck for this recipe.
  • If you don't have a pressure cooker or Dutch oven, you can cook the lamb and rice in separate pots and then combine them before serving.
