Method
- In a medium-sized pot, whisk together the rice flour, coconut milk, sugar, and water until smooth.
- Place the pot on medium heat and stir the mixture constantly until it thickens, around 15-20 minutes.
- Add the corn kernels to the pot and mix well.
- Grease a baking dish with coconut oil or butter and pour the mixture into the dish.
- Smooth the surface with a spatula and let it cool to room temperature for at least an hour.
- Once cooled, sprinkle the toasted shredded coconut and sesame seeds over the top.
- Place the baking dish in the toaster or oven and toast until the top is golden brown, around 5-7 minutes.
- Remove from the heat and let it cool for a few minutes before slicing into squares or diamonds.
