Ingredients

  • 1 cup coconut milk
  • 1/2 cup cashews
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 2 tbsp oil
  • Salt to taste

Equipment

  • A pressure cooker or a deep pan
  • A blender or a mixer grinder
  • A spatula

Method

  1. Heat oil in a pressure cooker or a deep pan.
  2. Add finely chopped onion and green chillies. Saute until onion turns golden brown.
  3. Add ginger garlic paste and saute for a minute.
  4. Add mixed vegetables and saute for 2 minutes.
  5. Add turmeric powder, coriander powder, cumin powder, and garam masala. Mix well.
  6. Grind cashews to a fine paste and add to the vegetables.
  7. Add coconut milk and salt to taste. Mix well.
  8. Add 1 cup of water and mix well.
  9. Cover the pressure cooker and cook for 2 whistles or cook in a deep pan until the vegetables are cooked and the curry thickens.
  10. Serve hot with rice.

  • You can add any vegetables of your choice to this curry.
  • If you do not have coconut milk, you can use regular milk or cream.
  • If you want a thicker curry, you can add more cashews or coconut milk.
