- 2 cups Basmati Rice
- 3 cups Water
- 4 tbsp Oil
- 1 cup Carrots (chopped)
- 1 cup Green Peas
- 1 cup Cabbage (shredded)
- 1 cup Capsicum (chopped)
- 1 cup Onions (chopped)
- 3-4 Garlic cloves (chopped)
- 2-3 Green Chillies (chopped)
- 2 tsp Soy Sauce
- 2 tsp Red Chilli Sauce
- 1 tsp Vinegar
- 1 tsp Salt
- 1 tsp Pepper Powder
- 2 Eggs (optional)
Equipment
- A large skillet or wok
- A sharp knife
- A cutting board
- A measuring cup
- A wooden spatula
Method
- Wash and soak the rice for 30 minutes.
- Heat oil in a large skillet or wok over medium-high heat.
- Add the onions, garlic, and green chillies and sauté for 2-3 minutes until the onions turn translucent.
- Add the carrots, green peas, cabbage, and capsicum and sauté for 5-6 minutes until the vegetables are cooked.
- Push the vegetables to one side of the skillet or wok and crack the eggs into the empty space. Scramble the eggs and mix them with the vegetables.
- Add the soy sauce, red chilli sauce, and vinegar and mix well.
- Drain the water from the soaked rice and add it to the skillet or wok. Stir well.
- Add 3 cups of water, salt, and pepper powder and mix well.
- Cover and cook for 10-12 minutes until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and serve hot.

- You can add or reduce the amount of vegetables according to your preference.
- You can add scrambled eggs or omit them according to your preference.
- You can adjust the spice level by adding more or less chilli sauce.
