- 1 kg long grain basmati rice
- 1 whole chicken (cut into pieces)
- 2 onions (finely chopped)
- 4 cloves of garlic (minced)
- 2 medium-sized tomatoes (diced)
- 2 tablespoons tomato paste
- 2 tablespoons baharat spice mix
- 2 cinnamon sticks
- 4 cloves
- 4 cardamom pods
- 4 bay leaves
- 1 tablespoon salt
- 2 tablespoons vegetable oil
- 4 cups of water
- 1/2 cup raisins (optional)
- 1/2 cup slivered almonds (optional)

Method
- Wash the rice until the water runs clear and soak the rice in water for 30 minutes.
- Heat the oil in a large pot over medium heat and sauté the onions until they are golden brown.
- Add the chicken and cook until it is no longer pink.
- Add the garlic, tomatoes, tomato paste, baharat spice mix, cinnamon sticks, cloves, cardamom pods, bay leaves, and salt. Stir everything together and cook for 5 minutes.
- Add 4 cups of water to the pot and bring it to a boil.
- Drain the soaked rice and add it to the pot. Stir everything together and bring it to a boil.
- Reduce the heat to low, cover the pot with a lid, and cook for 30 minutes.
- In a separate skillet, toast the slivered almonds until they are golden brown.
- In the same skillet, sauté the raisins until they are plump and set aside.
- After 30 minutes, remove the pot from the heat and let it sit for 10 minutes.
- Fluff the rice with a fork and transfer it to a serving platter.
- Sprinkle the toasted slivered almonds and sautéed raisins on top of the rice.
- Serve hot and enjoy!
Notes
- You can use lamb instead of chicken to make this dish.
- Adjust the spice level according to your taste preference.
- You can add vegetables like carrots and peas to the dish.
- If you don't have baharat spice mix, you can make your own by combining cinnamon, coriander, cumin, black pepper, and cardamom.
