Ingredients

  • 1 cup jade pearl rice

  • 1 cup snow peas, trimmed
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 green onions, sliced
  • Salt and pepper, to taste

Method

  1. Rinse the jade pearl rice in cold water and drain.
  2. In a large pot, bring the water to a boil. Add the rice and a pinch of salt, cover, and reduce heat to low.
  3. Cook the rice for 20 minutes or until tender and the water is absorbed.
  4. In a medium-sized skillet, heat the vegetable oil over medium-high heat.
  5. Add the onion and garlic, and sauté for 2 minutes or until softened.
  6. Add the red bell pepper and snow peas, and sauté for another 5 minutes or until the vegetables are tender-crisp.
  7. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and toasted sesame oil.
  8. When the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables.
  9. Pour the sauce over the rice and vegetables, and stir to combine.
  10. Season with salt and pepper, to taste.
  11. Garnish with sliced green onions and serve.

Notes

For a vegan version of this recipe, you can substitute the honey with agave nectar or another sweetener of your choice.
