Description

Ingredients

  • 1 cup of rice
  • 1 cup of grated coconut
  • 2 cups of water
  • 1 tsp of salt
  • 1 tbsp of oil
  • 1 tsp of mustard seeds
  • 1 tsp of urad dal
  • 2 dried red chillies
  • A few curry leaves

Equipment

  • A medium-sized pot
  • A frying pan
  • A wooden spoon
  • A strainer

Method

  1. Wash the rice thoroughly and soak it in water for 10 minutes.
  2. Heat oil in a pot and add mustard seeds. Once they start spluttering, add urad dal, dried red chillies, and curry leaves. Fry for a minute.
  3. Add the grated coconut and fry for a minute on low heat.
  4. Add the soaked rice and fry for a minute.
  5. Add salt and water and bring it to a boil.
  6. Once it starts boiling, reduce the heat and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  7. Turn off the heat and let it rest for 10 minutes.
  8. Fluff the rice with a fork.
  9. Serve hot with your favourite curry or chutney.

Notes

  • You can use freshly grated coconut or frozen grated coconut.
  • If you don't have urad dal, you can skip it.
  • If you want a spicier version, you can add more dried red chillies.
  • If you want a creamier version, you can add a dash of coconut milk.
