- 1 cup basmati rice
- 2 tbsp ghee
- 1 tsp cumin seeds (jeera)
- 2 bay leaves (tej patta)
- 2 cloves (laung / lavang)
- 1 cinnamon stick (dalchini)
- 2 cardamom pods (elaichi)
- 1 small onion, finely chopped
- 1 tsp ginger-garlic paste
- Salt to taste
- 2 cups hot water

Method
- Rinse the basmati rice in cold water until the water runs clear. Drain and set aside.
- Heat the ghee in a large saucepan over medium heat.
- Add the cumin seeds, bay leaves, cloves, cinnamon stick, and cardamom pods to the pan. Stir for a few seconds until fragrant.
- Add the chopped onion to the pan and sauté until softened and lightly browned, about 5 minutes.
- Add the ginger-garlic paste to the pan and sauté for another minute.
- Add the drained rice to the pan and stir to coat in the ghee and spices.
- Add salt to taste and stir again.
- Pour in the hot water and stir once more to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid.
- Simmer the rice for 15-20 minutes, or until the water has been absorbed and the rice is tender.
- Remove the pan from the heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and serve hot.
Notes
