The dessert is made with sticky rice, which is cooked in coconut milk, sugar, and salt. Once the rice is cooked, it is topped with fresh mango slices and then drizzled with a sweet coconut sauce.

Prep Time

Cook Time

Cooking time for this dessert is approximately 20 minutes.

Ingredients

  • 1 cup of sticky rice
  • 1 can of coconut milk
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt
  • 1 ripe mango
  • 2 tablespoons of toasted sesame seeds

Equipment

  • Medium saucepan
  • Steamer basket
  • Bowl
  • Plate

Method

  1. Rinse the sticky rice several times until the water is clear, then soak the rice in water for 30 minutes.
  2. Drain the rice and transfer it to a steamer basket. Place the basket over a pot of boiling water and steam for 20 minutes, or until the rice is tender.
  3. While the rice is cooking, make the coconut sauce. In a medium saucepan, mix together the coconut milk, sugar, and salt. Cook over medium heat, stirring occasionally, until the sugar has dissolved.
  4. Once the rice is cooked, transfer it to a bowl and pour the coconut sauce over it. Mix well to combine.
  5. Cover the bowl with a plate and let it sit for 10 minutes, allowing the rice to absorb the coconut sauce.
  6. Peel the mango and cut it into thin slices.
  7. To serve, place a portion of the sticky rice on a plate and top with mango slices. Drizzle with additional coconut sauce and sprinkle with toasted sesame seeds.

Notes

To get the best flavor, it is recommended to use fresh mangoes that are ripe and juicy. If fresh mangoes are not available, canned mangoes can also be used.
