Method

- Once the seeds start to crackle, add chopped onions and green chilies. Saute until the onions turn golden brown.
- Add ginger-garlic paste and saute for a minute or until the raw smell goes away.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the mixed vegetables and cook for 5 minutes.
- Add red chili powder, coriander powder, turmeric powder, and salt. Mix well and cook for a minute.
- Add coconut milk and cashew nuts. Mix well and let it simmer for 5-7 minutes until the vegetables are cooked and the kurma thickens.
- Garnish with coriander leaves and serve hot with ghee rice.
