Method
Follow these steps to make kothimeera rice:- Wash the rice thoroughly and soak it in water for around 30 minutes.
- Drain the water and add 2 cups of fresh water to the rice.
- Cook the rice in a rice cooker or pressure cooker.
- Once the rice is cooked, let it cool down to room temperature.
- Wash and finely chop the coriander leaves.
- In a pan or kadhai, heat 2 tbsp of oil.
- Add mustard seeds, cumin seeds, urad dal, and chana dal to the oil and let them splutter.
- Add asafoetida, chopped onion, and green chilies to the pan and sauté until the onion turns golden brown.
- Add the chopped coriander leaves to the pan and sauté for a minute.
- Now, add the cooked rice to the pan and mix well.
- Add salt to taste and mix well.
- Cover the pan and let the rice cook on low flame for around 5 minutes.
- Turn off the flame and let the rice sit covered for another 5 minutes.
- Remove the lid, fluff the rice with a fork, and serve hot.
Notes
- You can also use leftover rice to make this dish.
- If you don't have a rice cooker or pressure cooker, you can cook the rice in a pot on the stove.
- Make sure to wash the coriander leaves thoroughly before chopping them.
- You can adjust the amount of green chilies according to your taste.
