- 100g pudding rice
- 50g caster sugar
- 600ml whole milk
- 1 tbsp butter

Method
- Preheat your oven to 150°C (fan)/170°C/Gas 3.
- Rinse the rice in cold water and drain well.
- Add the rice, sugar, and milk to the saucepan and stir well.
- Bring the mixture to a gentle simmer over low heat, stirring occasionally.
- Add the butter and nutmeg and stir well.
- Transfer the mixture to an ovenproof dish.
- Bake in the oven for 1 1/2 to 1 3/4 hours, or until the pudding is golden brown on top and the rice is cooked through.
- Remove from the oven and allow to cool for a few minutes before serving.
