For the Jeera Rice:- 1 cup Basmati rice
- 2 cups water
- 1 tablespoon ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 bay leaf
- 1 cinnamon stick
- 3-4 cloves
- 1-2 green cardamoms
- Salt to taste
- 1 tablespoon oil
- 1 onion, chopped
- 2-3 garlic cloves, minced
- 1-2 green chilies, chopped
- 1 teaspoon ginger paste
- 1 cup mixed vegetables (carrots, peas, potatoes, beans)
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 cup coconut milk
- Salt to taste

- A medium-sized cooking pot

Method
For the Jeera Rice:
1. Rinse the rice in water until the water runs clear. Drain and set aside.2. In a medium-sized pot, heat the ghee over medium heat.
3. Add the cumin seeds, bay leaf, cinnamon stick, cloves, and green cardamoms. Fry for a few seconds until fragrant.
4. Add the rice and stir well to coat it with the ghee and spices.
5. Add the water and salt to taste. Bring to a boil, then reduce the heat to low, cover the pot and let it simmer for about 18-20 minutes.
6. Once the rice is cooked, fluff it with a fork and set aside.
For the Kurma:
1. In a skillet, heat the oil over medium heat.2. Add the chopped onions and sauté until they turn translucent.
3. Add the minced garlic, chopped green chilies, and ginger paste. Sauté for a minute.
4. Add the mixed vegetables and cook for about 5 minutes.
5. Add the coriander powder, cumin powder, garam masala powder, turmeric powder, and red chili powder. Mix well.
6. Add the coconut milk and salt to taste. Simmer for 5-7 minutes.
7. Once the kurma is done, serve it over the jeera rice.
