- 1 cup basmati rice
- 2 cups water
- 1 onion, chopped

- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder

- 1/4 tsp garam masala powder
- 2 tbsp oil
- Salt to taste
- Fresh coriander leaves for garnish

Method
- Wash the rice thoroughly and soak it in water for 30 minutes.
- Heat the oil in a pan and add the cumin seeds.
- When the cumin seeds start to splutter, add chopped onions and green chilies. Sauté until onions turn light brown.
- Add ginger-garlic paste and sauté for another 1-2 minutes.
- Add chopped tomatoes and sauté until they become soft and mushy.
- Add chopped vegetables (potatoes, carrots, and green peas) and sauté for 3-4 minutes.
- Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes.
- Add soaked rice and mix well. Cook for 2-3 minutes.
- Add 2 cups of water and mix well. Bring it to a boil.
- Lower the heat and cover the pan with a lid. Cook for 18-20 minutes or until the rice is cooked and all the water has been absorbed.
- Garnish with fresh coriander leaves and serve hot with raita or salad.

- You can add more or less water depending on the quality of rice and the consistency you prefer.
- You can also add other vegetables like cauliflower, beans, or bell peppers.
