Method

- Add the soaked rice to the pressure cooker and sauté for 2-3 minutes.
- Add water to the cooker and stir well. Close the lid and pressure cook for 2 whistles.
- Once the cooker cools down, open the lid and fluff up the rice with a fork.
- Heat a frying pan and add grated jaggery to it. Cook on low flame till it melts and forms a syrup-like consistency.
- Add cardamom powder to the jaggery syrup and mix well.
- Pour the jaggery syrup over the rice and mix well.
- Garnish the rice with chopped almonds and cashews.
- Your jaggery rice is ready to serve. Serve hot and enjoy!

- You can add more or less jaggery as per your taste preference.
