Ingredients

  • 1 cup rice
  • 2 cups of water
  • 1 carrot
  • 1 potato

  • 1 onion

  • 2-3 green chilies
  • 1 tablespoon of oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste

Equipment

  • A pressure cooker or a pot with a lid
  • A knife and a chopping board
  • A pan
  • A spatula

Method

  1. Wash the rice thoroughly and soak it in water for 10-15 minutes.
  2. Chop all the vegetables into small pieces and keep them aside.
  3. Heat oil in a pressure cooker or a pot.
  4. Add mustard seeds and cumin seeds and let them splutter.
  5. Add chopped onion, garlic, ginger, and green chilies and sauté until they turn golden brown.
  6. Add all the chopped vegetables and sauté for a few minutes.
  7. Add turmeric powder, red chili powder, and salt to taste and mix well.
  8. Add 2 cups of water and bring it to a boil.
  9. Drain the water from the soaked rice and add it to the boiling water.
  10. Stir well and close the pressure cooker or the pot with a lid.
  11. Cook for 2-3 whistles in a pressure cooker or for 20-25 minutes on a low flame.
  12. Switch off the flame and let the pressure release naturally.
  13. Once the pressure is released, open the lid and fluff the rice with a fork.
  14. Iyengar Kadambam Rice is ready to be served hot.

Notes

You can add any vegetables of your choice to this recipe. You can also add some grated coconut or cashew nuts for a richer taste.
