Ingredients

  • 2 cups cooked rice
  • 4 ripe tomatoes, chopped
  • 1 onion, finely chopped

  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp garam masala
  • 1 tbsp oil
  • Salt to taste

  • A heavy-bottomed pan
  • A spatula
  • A chopping board
  • A knife
  • A measuring spoon

Method

  1. Heat oil in a heavy-bottomed pan and add cumin seeds, mustard seeds, and fennel seeds.
  2. When the seeds start to splutter, add chopped onions and green chilies. Saute until onions turn translucent.
  3. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Mix well and cook until tomatoes become soft and mushy.
  4. Add garam masala and mix well.
  5. Add cooked rice and mix well with the tomato mixture.
  6. Reduce the heat to low and cover the pan. Cook for 5-7 minutes until the rice is heated through.
  7. Remove from heat and let it sit for 5 minutes before serving.
  8. Garnish with coriander leaves and serve hot.

Notes

  • You can add vegetables like carrots, beans or peas to make it more nutritious.
  • You can also add grated coconut while sautéing onions for an extra flavor.
  • Adjust the amount of red chili powder and green chilies as per your taste.
