- 1 cup basmati rice
- 2 cups water
- 1 onion, finely chopped
- 1 capsicum, finely chopped
- 1 carrot, finely chopped
- 1 cup cabbage, finely chopped
- 2 tbsp cornflour
- 2 tbsp maida (all-purpose flour)
- 1 tsp ginger-garlic paste
- 1 tsp red chilli powder
- 1 tsp soy sauce
- 1 tsp vinegar
- Salt to taste
- Oil for frying and cooking
Equipment
- A large pot for cooking rice
- A wok or a deep frying pan for making Manchurian balls and sautéing vegetables
- A strainer for draining the rice
- A mixing bowl for making the Manchurian balls mixture
Method
- Wash the rice thoroughly and soak it in water for 20 minutes.
- Drain the rice and add it to a pot with 2 cups of water. Bring it to a boil, then reduce the heat to low and let it simmer until the rice is cooked. This should take around 15 minutes. Once the rice is cooked, switch off the heat and let it cool down.
- In a mixing bowl, add the chopped vegetables, cornflour, maida, ginger-garlic paste, red chilli powder, soy sauce, vinegar, and salt. Mix everything well to form a dough-like mixture.
- Heat oil in a wok or a deep frying pan. Take small portions of the Manchurian mixture and shape them into small balls. Once the oil is hot, add the Manchurian balls to the oil and fry them until they turn golden brown. Once done, remove them from the oil and keep them aside.
- In the same wok or pan, add some more oil and sauté the chopped onions, capsicum, carrot, and cabbage until they are cooked well.
- Once the vegetables are cooked, add the fried Manchurian balls to the wok and mix everything well.
- Now, add the cooked rice to the wok and mix everything well. Make sure that the rice is not overcooked or mushy.
- Once everything is mixed well, switch off the heat and let the Manchurian rice cool down for a few minutes.
- Garnish the Manchurian rice with some chopped coriander leaves and serve it hot.
