  • 2-3 green chilies, chopped
  • A few curry leaves
  • Salt to taste
  • 2 tbsp oil

Equipment

For this recipe, you will need a pan or kadhai to cook the rice.

Method

  1. Take a pan and heat 2 tbsp of oil in it.
  2. Once the oil is hot, add 1 tsp of mustard seeds and let them splutter.
  3. Add 1 tsp of urad dal and 1 tsp of chana dal to the pan.
  4. Fry the dals until they turn golden brown.
  5. Add 2-3 green chilies, a few curry leaves, and 1 tsp of turmeric powder to the pan.
  6. Stir everything together and let it cook for a minute or two.
  7. Add the cooked rice to the pan and mix it well with the spices.
  8. Add salt to taste and mix everything together.
  9. Now, add the juice of 1 lemon to the pan and mix it well.
  10. Let everything cook together for a few minutes.
  11. Once everything is well combined and heated through, turn off the heat.
  12. Your lemon rice is now ready to be served!

Notes

If you want your lemon rice to be more flavorful, you can add some grated coconut to the dish. You can also add some roasted peanuts or cashews to give it a nice crunch.
