Method

  1. Wash the rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a large pot over medium heat. Add cumin seeds and bay leaf and fry for a few seconds until fragrant.
  3. Add the onions and fry until they become translucent.
  4. Add ginger-garlic paste and green chilies, and fry for 1 minute.
  5. Add chopped tomatoes and fry until they become soft and mushy.
  6. Add coriander powder, red chili powder, and garam masala, and fry for a minute.
  7. Add the drained rice and fry for 2 minutes until the rice is coated with the spices.
  8. Add water and salt to the pot, and bring to a boil.
  9. Reduce heat to low, cover the pot with a lid, and let the rice cook for around 20-25 minutes or until the water is completely absorbed and the rice is cooked.
  10. Turn off the heat and let the rice rest for 5-10 minutes before fluffing it with a fork.
