- 2 cups long-grain rice

- 1 can black beans, drained and rinsed (15 oz)
- 1 can corn, drained (15 oz)

- 1 tsp cumin
- 1 tsp paprika

- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro

Method:

- Add the diced tomatoes, black beans, corn, chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir to combine and bring to a simmer. Cook for 5-7 minutes, or until heated through.
- Remove the skillet from heat and add the cooked rice to the skillet. Stir to combine.
- Sprinkle the shredded cheddar cheese over the top of the rice and beef mixture.
- Cover the skillet with a lid and let sit for 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
