Japanese Layered Rice, also known as "Chakin-zushi," is a traditional Japanese dish in which seasoned sushi rice is layered with various fillings and wrapped in a thin omelette. This dish is visually appealing and can be served as a main course or as a beautiful addition to a bento box.

Ingredients

For the Sushi Rice:
  • 2 cups Sushi Rice
  • 2 cups Water
  • 1/4 cup Rice Vinegar
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
For the Omelette:
  • 4 Eggs
  • 1 tablespoon Sugar
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Mirin (Japanese sweet rice wine)
  • 1/4 teaspoon Salt
  • 1 tablespoon Vegetable Oil
For the Filling:
  • 4 ounces Sashimi-grade Tuna, diced
  • 4 ounces Sashimi-grade Salmon, diced
  • 4 ounces Cooked Shrimp, chopped
  • 1/2 cup Cooked Edamame
  • 1 Carrot, julienned
  • 1 Cucumber, julienned
  • 4 sheets Nori (dried seaweed)

Method

1. Rinse the sushi rice in a fine mesh strainer until the water runs clear. Then, soak the rice in water for 30 minutes. 2. In a large saucepan, combine the rice and 2 cups of water. Bring to a boil, then reduce to a simmer and cover for 15 minutes. 3. In a bowl, whisk together the rice vinegar, sugar, and salt until the sugar dissolves. Once the rice has finished cooking, transfer it to a large bowl and add the vinegar mixture. Mix well and let cool. 4. In a separate bowl, beat together the eggs, sugar, soy sauce, mirin, and salt until well combined. 5. Heat the vegetable oil in a frypan over medium heat. Pour in the egg mixture and swirl the pan to create a thin layer. Cook for 1-2 minutes until set, then flip and cook for an additional 30 seconds. Transfer the omelette to a plate and let cool. 6. Cut the omelette into 4 equal squares and set aside. 7. On a sushi mat, place a sheet of nori shiny-side down. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. 8. Add a layer of tuna, salmon, shrimp, edamame, carrot, and cucumber on top of the rice. 9. Place a square of omelette on top of the filling. 10. Use the sushi mat to tightly roll the nori into a cylinder. Repeat with the remaining ingredients. 11. Slice the rolls into 1-inch pieces and serve.

Notes

Make sure to use sashimi-grade fish for this dish. It is also important to use a sharp knife when slicing the rolls to ensure clean cuts.
