- 1 cup long grain white rice
- 2 cups water
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested

- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped

Method
- Begin by rinsing the rice in a fine mesh strainer until the water runs clear.
- In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, stirring frequently.
- Add the rinsed rice to the saucepan and stir to coat with the garlic and oil.
- Add the water, lemon juice, lemon zest, salt, and black pepper to the saucepan and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan with a lid.
- Simmer the rice for 18-20 minutes, or until the liquid has been absorbed and the rice is tender.
- Remove the saucepan from the heat and let it sit, covered, for 5-10 minutes.
- Remove the lid and fluff the rice with a fork. Add the chopped parsley and stir to combine.
- Transfer the lemon garlic rice to a serving dish and garnish with additional parsley and lemon wedges, if desired.

Notes
