- 2 cups leftover rice
- 1/2 cup all-purpose flour

- 1/2 cup yogurt

- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 onion, finely chopped
- 1/2 tomato, finely chopped
- 2-3 green chilies, finely chopped
- 1/4 cup coriander leaves, finely chopped
- 1 tablespoon oil

Method
- In a bowl, mix together the leftover rice, all-purpose flour, semolina, yogurt, water, salt, and baking soda. Mix well to form a smooth batter.
- Heat a non-stick pan on medium heat. Add the oil and let it heat up.
- Add the cumin seeds and mustard seeds to the pan. Let them splutter for a few seconds.
- Add the chopped onion, tomato, and green chilies to the pan. Saute for a few minutes until the vegetables are soft.
- Add the coriander leaves to the pan and mix well.
- Pour a ladleful of the batter on the pan and spread it out in a circular motion.
- Sprinkle some of the onion-tomato mixture on top of the batter.
- Cover the pan and let the uttapam cook for 2-3 minutes on medium heat.
- Flip the uttapam and cook for another 1-2 minutes on the other side.
- Repeat the process with the remaining batter and onion-tomato mixture.
- Serve hot with coconut chutney or sambar.
Notes
- If the batter is too thick, add a little more water to it.
- You can add other vegetables like capsicum, carrots, or corn to the onion-tomato mixture.
- You can also add some grated cheese on top of the uttapam for a cheesy twist.
