Ingredients

For the meatballs:

For the rice:
  • 1 cup white rice
  • 2 cups water

Method

1. In a large mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, parsley, egg, salt, and black pepper. Mix until well combined. 2. Shape the meat mixture into 1-inch meatballs. 3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the skillet and set aside. 4. In the same skillet, add the diced onion and minced garlic. Cook until the onion is softened, about 5 minutes. 5. Add the can of diced tomatoes, salt, and black pepper. Stir to combine. 6. Return the meatballs to the skillet and spoon the sauce over them. 7. Cover the skillet and let simmer for 20 minutes. 8. While the meatballs are simmering, prepare the rice. In a medium pot with a lid, combine the rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low and simmer for 18 minutes, or until the rice is tender and the water has been absorbed. 9. Serve the meatballs and sauce over a bed of rice.
