Method

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken and cook for 5-7 minutes or until browned on all sides.

  4. Add the turmeric, cumin, smoked paprika, cayenne pepper, salt, and black pepper to the skillet and stir to coat the chicken and onion mixture.
  5. Add the Mahatma yellow rice to a medium saucepan and rinse with cold water until the water runs clear.
  6. Add the chicken broth to the saucepan and bring to a boil.
  7. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  8. Add the chicken and onion mixture to the rice and stir to combine.
  9. Garnish with fresh cilantro leaves and serve.
